There is a "stand alone" installer that's the best place to start.

MacOs

Two "frameworks" must be installed first: GDAL 1.9 and GSL. The former also comes with Num.py.

THEN, download and install QGIS 1.8.0-2 (http://www.kyngchaos.com/software/qgis)
